New Year’s Eve dinner


I finally came around to write this. My NYE dinner was quite simple. We had salmon with veggies and rice.

I won’t beat around the bush here and just cut to the chase.

What you need (for 4 people):

  • 1 kg of fresh (not frozen!) salmon steaks (with or without skin, however you want it)
  • 1 ½ lemon
  • Salt, black pepper
  • 4 spoons of olive oil
  • 3dl cup of rice
  • ½ kg of frozen vegetable (I used broccoli and cauliflower, but use whatever you like)
  • 2 spoons of butter

 

Clean the salmon and put it on a kitchen cloth to dry. Squeeze the lemon juice out of the lemons and pour it into a plate, add salt, black pepper and olive oil. Mix the ingredients in the plate and start dipping the steaks into the lemon marinade. Place the salmon steaks in the bowl and pour the remaining marinade in the bowl, cover the top and set in the refrigerator for about 2 hours. In the meantime set the oven to 180°C.

After 2 hours put the steaks and marinade into baking tray, there’s no need to add oil, because it’s in marinade. Put the tray into preheated oven for 30 min.

While salmon is in oven cook the rice in salted water for 20 min (or until it’s fully cooked). Also cook the vegetables in salted water (check the cooking time on the package) after vegetable is cooked, drain the water and add butter to it. Wait for the butter to melt and gently stir the vegetables so everything gets covered in butter.

Serve the dish on the plate however you find suitable.

 

P.S.: Instead of the lemon, you can also use an orange (only use one orange, since they are bigger than lemons) in your marinade and instead of regular butter you can add herb butter to your vegetables.
